🧂 Ingredients:
- 1 kg octopus (fresh or frozen, cleaned and cut into chunks)
- 800g potatoes (peeled and cut into large pieces)
- 2 medium onions (sliced)
- 150 ml sweet red wine
- 2/3 tbsp tomato paste
- 12 tbsp extra virgin olive oil
- 1 bay leaf
- ½ tsp ground pepper
- Optional: freshly ground pepper for serving
🍳 Instructions:
- Prep the octopus: Cut into 5–6 cm pieces. Rinse well.
- Cook the octopus: Place in a pot with onions, bay leaf, wine, and 600 ml water. Bring to a boil, then simmer for 1 hour until tender.
- Add flavor: Stir in tomato paste, olive oil, and pepper.
- Add potatoes: Simmer on medium-low for 30–40 minutes until potatoes are soft and sauce thickens. Stir often to prevent sticking.
- Rest & serve: Let sit for 20 minutes before serving. Garnish with freshly ground pepper.
