🇮🇪 Traditional Irish Guinness Beef Stew

🍳 Instructions:

  1. Prep the beef: Toss beef cubes with salt, pepper, and flour.
  2. Cook bacon in a Dutch oven until crisp. Remove and set aside.
  3. Brown the beef in batches in bacon drippings. Set aside.
  4. Sauté onions until golden. Add garlic and cook briefly.
  5. Add carrots, celery, parsnip, and cook for 5 minutes.
  6. Pour in Guinness, bring to a boil, and deglaze the pot.
  7. Stir in broth, tomato paste, Worcestershire, mushrooms, herbs, and return beef and bacon to the pot.
  8. Simmer covered on low for 2 hours. Then uncover and simmer another 30–45 minutes until beef is tender and sauce thickens.
  9. Season to taste and serve with crusty bread or Irish soda bread
