🍳 Instructions:
- Prep the beef: Toss beef cubes with salt, pepper, and flour.
- Cook bacon in a Dutch oven until crisp. Remove and set aside.
- Brown the beef in batches in bacon drippings. Set aside.
- Sauté onions until golden. Add garlic and cook briefly.
- Add carrots, celery, parsnip, and cook for 5 minutes.
- Pour in Guinness, bring to a boil, and deglaze the pot.
- Stir in broth, tomato paste, Worcestershire, mushrooms, herbs, and return beef and bacon to the pot.
- Simmer covered on low for 2 hours. Then uncover and simmer another 30–45 minutes until beef is tender and sauce thickens.
- Season to taste and serve with crusty bread or Irish soda bread
