🍳 Preparation Steps
Desalt the cod: Soak cod loins in water for 2–3 days, changing water every 8 hours.
Fry the cod: Coat cod in flour and shallow fry in olive oil until golden. Set aside.
Braised vegetables: In the same oil, gently cook onions, garlic, peppers, and tomatoes with bay leaf until soft and fragrant.
Prepare potatoes: Slice potatoes into thick rounds and fry or air-fry until golden but not overly crisp.
Assemble: Place fried cod on a serving dish, top with braised vegetables, and surround with potato slices.
Garnish: Sprinkle with fresh parsley and serve hot.
