🌶️ Grilled Piri Piri Chicken Recipe
👨🍳 Instructions:
1. Make the Piri Piri Marinade:
- In a bowl, mix garlic, paprika, chili powder, cumin, oregano, lemon juice, olive oil, salt, and pepper.
- Stir well until you get a thick marinade.
2. Prepare the Chicken:
- Spatchcock the chicken by cutting along the backbone and flattening it.
- Rub the marinade all over the chicken, making sure it’s well coated.
- Cover and refrigerate for at least 2 hours (overnight is best).
3. Grill or Roast:
- Preheat your grill or oven to 200°C (390°F).
- Grill or roast the chicken for 40–50 minutes, flipping halfway through, until golden and cooked through.
- For extra smoky flavor, grill over charcoal.
4. Serve:
- Sprinkle with chopped parsley.
- Serve with roasted potatoes, salad, or rice.
