π Ingredients:
- 2 lb heirloom or cherry tomatoes (mixed colors for flair)
- 1β2 balls of burrata cheese
- 1 cup fresh basil leaves
- ΒΌ cup pine nuts or walnuts
- β
cup extra virgin olive oil
- 1 clove garlic
- 3 tbsp grated Parmigiano Reggiano
- Juice of Β½ lemon
- Sea salt & black pepper to taste
π§ Basil Pesto:
- Blend basil, nuts, garlic, lemon juice, and olive oil until smooth.
- Stir in Parmigiano and season with salt and pepper. Adjust consistency with more oil or lemon juice if needed.
π½ Assembly:
- Spread pesto on a serving platter.
- Tear burrata gently and place on top.
- Slice tomatoes and arrange around the cheese.
- Drizzle with more pesto, sprinkle fresh basil leaves, and finish with flaky sea salt.

- Toasted garlic bruschetta
- Grilled chicken or shrimp
- A chilled glass of rosΓ© or sparkling water with lemon
