- Make the Marinade
- Blend scallions, garlic, peppers, thyme, spices, sugar, soy sauce, lime juice, and oil into a thick paste.
- Marinate the Pork
- Rub marinade all over pork. Cover and refrigerate for at least 6 hours, preferably overnight.
- Roast in the Oven
- Preheat oven to 375°F (190°C).
- Place pork on a baking rack over a foil-lined tray.
- Roast for 1.5 to 2 hours, turning halfway, until pork is tender and edges are caramelized.
- Optional Broil Finish
- Broil for 3–5 minutes to crisp the surface.
- Serve
- Slice and serve with rice and peas, fried plantains, or festival bread.
