🔥 Instructions

  1. Make the Marinade
    • Blend scallions, garlic, peppers, thyme, spices, sugar, soy sauce, lime juice, and oil into a thick paste.
  2. Marinate the Pork
    • Rub marinade all over pork. Cover and refrigerate for at least 6 hours, preferably overnight.
  3. Roast in the Oven
    • Preheat oven to 375°F (190°C).
    • Place pork on a baking rack over a foil-lined tray.
    • Roast for 1.5 to 2 hours, turning halfway, until pork is tender and edges are caramelized.
  4. Optional Broil Finish
    • Broil for 3–5 minutes to crisp the surface.
  5. Serve
    • Slice and serve with rice and peas, fried plantains, or festival bread.
