Ugali with cow trotters and sukuma wiki (collard greens)

Instructions:

Cow Trotters Stew:

  1. Boil cow trotters until soft (can take 1.5–2 hours or pressure cook for 45 mins).

  2. In another pan, fry onions until golden, then add garlic & ginger paste.

  3. Add chopped tomatoes, tomato paste, and spices. Cook until soft.

  4. Add the trotters and a bit of broth. Simmer for 15 minutes.

Sukuma Wiki:

  1. Heat oil in a pan, sauté chopped onions.

  2. Add finely chopped sukuma wiki and cook until wilted (5–10 mins).

  3. Season with salt and a pinch of curry powder if desired.

Ugali:

  1. Boil 4 cups of water.

  2. Gradually add maize flour while stirring to avoid lumps.

  3. Stir and mash until thick. Let it cook for 5–10 minutes covered.


🍽️ Dish 2: Ugali with beef stew and sukuma wiki

Ingredients:

  • 2 cups maize flour

  • 4 cups water

  • 500g beef (cubed)

  • 1 onion

  • 2 tomatoes

  • 1 tbsp tomato paste

  • Garlic & ginger

  • Oil, salt, pepper

  • Sukuma wiki

Instructions:

Beef Stew:

  1. Brown beef in a pan, then set aside.

  2. Sauté onions, garlic, ginger.

  3. Add tomatoes, tomato paste, and spices.

  4. Add beef back, cover with water or broth, and simmer until tender.

Sukuma wiki & Ugali: Same as Dish 1.


🍽️ Dish 3: Ugali with grilled chicken, beans & sukuma wiki

Ingredients:

  • 2 cups maize flour

  • 4 cups water

  • 2 chicken thighs or drumsticks

  • 1 cup dry or canned beans

  • Garlic, onion, spices

  • Sukuma wiki

Instructions:

Grilled Chicken:

  1. Marinate chicken in spices, garlic, lemon, and oil for at least 1 hour.

  2. Grill or bake until golden and fully cooked.

Beans:

  1. If dry, soak overnight, then boil until soft.

  2. Fry onions, garlic, add tomatoes and beans. Simmer and season.

Sukuma Wiki & Ugali: As above.
