- Brown the meat
- In a large pot, cook ground beef and sausage until browned.
- Season with salt and pepper, drain excess fat, and set aside.
- Sautรฉ aromatics
- Add olive oil, onion, and garlic to the pot. Cook until soft.
- Stir in tomato paste and cook for 1 minute.
- Build the soup
- Add diced tomatoes, marinara sauce, broth, herbs, and red pepper flakes.
- Return meat to the pot and bring to a boil.
- Add noodles
- Stir in broken lasagna noodles. Simmer until tender (about 10โ12 minutes).
- Add spinach during the last 2 minutes if using.
- Make cheese mixture
- In a bowl, mix ricotta, mozzarella, and Parmesan.
- Serve
- Ladle soup into bowls. Top with a scoop of cheese mixture and fresh basil.

- For vegetarian version, skip meat and add mushrooms, zucchini, and squash.
- Make ahead: prepare soup base and add noodles fresh when reheating.
