1. Brown the beef

  • Toss beef cubes in flour, salt, and pepper.
  • Sear in hot oil until browned on all sides. Remove and set aside.

2. Build the base

  • In the same pot, sauté onion and garlic until fragrant.
  • Stir in tomato paste, Worcestershire, thyme, and bay leaves.

3. Simmer low and slow

  • Return beef to the pot. Add broth and bring to a boil.
