🍲 Louisiana Seafood Gumbo Recipe

- Make the roux: In a large pot, heat oil over medium heat. Add flour and stir constantly for about 20 minutes until the roux turns a deep peanut butter or chocolate color.
- Add vegetables: Stir in onion, bell peppers, celery, garlic, and okra. Cook for 5 minutes.
- Deglaze and build flavor: Add beer, seafood stock, filé powder, bay leaves, Cajun seasoning, crab claw meat, Worcestershire sauce, salt, and cayenne. Bring to a boil, then reduce heat and simmer for 1 hour.
- Add seafood: Stir in shrimp, fish, oysters, and lump crabmeat. Cook for 8–10 minutes until seafood is fully cooked.
- Finish: Add parsley and adjust seasoning.
- Serve: Ladle gumbo over hot rice and garnish with green onions.
