Instructions
- Sauté Aromatics
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, cook until soft and fragrant.
- Add Tomatoes and Okra
- Stir in diced tomatoes and sliced okra.
- Season with salt, pepper, and optional spices.
- Simmer
- Cover and simmer on medium-low heat for 20–25 minutes until okra is tender and flavors meld.
- Serve
- Serve hot with rice, cornbread, or grilled meat.

2 cups fresh or frozen okra, sliced
1 (14.5 oz) can diced tomatoes (or 2 fresh tomatoes, chopped)
2 tbsp olive oil
½ onion, chopped
2 garlic cloves, minced
Salt and black pepper to taste
Optional: pinch of cayenne or red pepper flakes for heat
