- Prepare the ingredients
- Slice the sausages into thick chunks (about 3–4 cm).
- Cut the bell peppers into strips.
- Chop the onion and mince the garlic.
- Sear the sausage
- Heat olive oil in a large pan over medium heat.
- Add the sausage pieces and cook until browned on all sides.
- Remove and set aside.
- Sauté the vegetables
- In the same pan, add onions and cook until soft and golden.
- Add garlic and stir for 1 minute.
- Add the bell peppers and cook for 5–7 minutes until slightly tender.
- Deglaze with wine
- Pour in the red wine and let it simmer for 2–3 minutes to reduce slightly.
- Add tomatoes and seasonings
- Stir in grated fresh tomatoes or tomato paste.
- Add salt, black pepper, and chili flakes if you like it spicy.
- Return the sausage to the pan and mix well.
- Simmer the stew
- Add a splash of water if needed.
- Cover and simmer on low heat for 15–20 minutes until the sauce thickens and the flavors meld.
- Finish and serve
- Sprinkle with fresh parsley.
- Serve hot with crusty bread, rice, or even over mashed potatoes.
