1. Cook the Beef with Gravy:

Season the beef with salt, pepper, and herbs.

In a hot pan, sear the beef on both sides until browned.

Remove beef, then sauté onions and garlic in the same pan.

Sprinkle flour, stir well, then slowly pour in the beef broth to create the gravy.

Return beef to the pan, cover, and let simmer on low heat for 1.5–2 hours (or bake in the oven covered at 170°C / 340°F) until very tender.
2. Make the Mashed Potatoes:

Boil the potatoes in salted water until soft (about 15–20 minutes).

Drain, then mash with butter and milk until creamy.

Season with salt and pepper to taste.
3. Steam or Boil the Vegetables:

Steam or boil the peas and carrots for 5–7 minutes until tender.

Season lightly and add a little butter if desired.
4. Serve:

Plate the mashed potatoes, top with beef and gravy, and add the vegetables on the side.
