1. Cook the Beef with Gravy:

  • Season the beef with salt, pepper, and herbs.

  • In a hot pan, sear the beef on both sides until browned.

  • Remove beef, then sauté onions and garlic in the same pan.

  • Sprinkle flour, stir well, then slowly pour in the beef broth to create the gravy.

  • Return beef to the pan, cover, and let simmer on low heat for 1.5–2 hours (or bake in the oven covered at 170°C / 340°F) until very tender.

2. Make the Mashed Potatoes:

  • Boil the potatoes in salted water until soft (about 15–20 minutes).

  • Drain, then mash with butter and milk until creamy.

  • Season with salt and pepper to taste.

3. Steam or Boil the Vegetables:

  • Steam or boil the peas and carrots for 5–7 minutes until tender.

  • Season lightly and add a little butter if desired.

4. Serve:

  • Plate the mashed potatoes, top with beef and gravy, and add the vegetables on the side.
