- Velvet the chicken (optional but recommended)
- Mix chicken with 1 tsp cornstarch, 1 tsp soy sauce, and a splash of water. Let sit for 15โ20 minutes.
- Prepare the sauce
- In a small bowl, mix soy sauce, oyster sauce, sugar, and a splash of water. Set aside.
- Stir-fry the chicken
- Heat oil in a wok or pan over high heat.
- Add chicken and stir-fry until lightly browned. Remove and set aside.
- Cook the vegetables
- In the same pan, add garlic and onions. Stir-fry for 1 minute.
- Add bell peppers, broccoli, and mushrooms. Cook for 3โ4 minutes until tender-crisp.
- Combine & finish
- Return chicken to the pan. Pour in the sauce.
- Stir everything together and cook for 2 more minutes until glossy and well coated.
- Serve hot
- Garnish with sesame seeds or fresh herbs. Serve with steamed rice or noodles.
