Main Ingredients:
- 500g calamari rings, cleaned and fresh or thawed
- 1 cup tomato sauce (preferably homemade or high-quality canned)
- 1/2 cup green olives, pitted and sliced
- 1/2 cup black olives, pitted and sliced
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp chili flakes (optional, for heat)
- Salt and black pepper, to taste
- Fresh parsley, chopped for garnish
- 1 lemon wedge, for serving
🔥 Preparation Method
1. Sauté the Aromatics
- In a large skillet, heat olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until soft and fragrant (about 3–4 minutes).
2. Add the Sauce Base
- Stir in the tomato sauce, paprika, chili flakes (if using), salt, and black pepper.
- Let the sauce simmer gently for 5–7 minutes to develop flavor.
3. Cook the Calamari
- Add the calamari rings to the sauce.
- Cook for 5–8 minutes, just until the calamari turns opaque and tender.
4. Add the Olives
- Stir in the green and black olives, and let everything simmer together for another 2–3 minutes.
5. Finish and Serve
- Taste and adjust seasoning if needed.
- Garnish with fresh parsley and serve with a lemon wedge on the side.
- Pair with crusty bread, steamed rice, or grilled vegetables.
