Make the marinade: Blend peri-peri sauce, tomato puree, lemon juice, garlic, bay leaf, olive oil, sugar, and salt until smooth.
Marinate the steak: Flatten steaks to 1 cm thick, pour marinade over them, and refrigerate for 30 minutes to 24 hours.
Cook the steak: Grill or pan-sear on high heat for 1–2 minutes per side until caramelized. Let rest.
Prepare chilli butter: Mix chopped chillies with softened butter.
Assemble: Slice rolls, spread chilli butter, add steak, tomato, and onion. Serve hot!
