500g boneless chicken thighs or breast, sliced
4 Greek-style pita breads (or flatbreads)

Marinate the Chicken
In a bowl, combine garlic, lemon, yogurt, olive oil, oregano, salt & pepper.
Add chicken and toss to coat well.
Let marinate at least 30 min, or up to overnight.

Cook the Chicken
Heat a grill pan or skillet over medium-high heat.
Cook chicken slices until golden and cooked through (about 3–5 min per side).
Let rest, then slice thinly.

Make the Tzatziki
Mix grated cucumber with yogurt, garlic, lemon juice, herbs, salt, and pepper.
Chill for 10+ minutes to let flavors meld. 
4.
Assemble the Pita Pockets
Warm pita breads in a pan or oven until soft.
Fill each with:
Shredded lettuce
Juicy chicken gyro
Tomato, cucumber, onion
A big dollop of tzatziki
Optional: sprinkle of chili flakes or feta 
Serve with lemon wedges 
Pair with oven-roasted potatoes or a Greek salad
