🥩 Portuguese Carne Assada (Azorean Pot Roast)
👨🍳 Method:
- Marinate the Meat Mix garlic, paprika, cumin, pepper, salt, wine, and vinegar. Rub over beef and refrigerate overnight.
- Sear the Beef Heat olive oil in a Dutch oven. Brown the beef on all sides for flavor.
- Add Aromatics Add sliced onion and bay leaves. Pour in the marinade and a bit of water to cover halfway.
- Slow Cook Cover and simmer on low heat for 2–3 hours until meat is tender. Add potatoes, chouriço, and carrots in the last hour.
- Serve Slice the beef and chouriço. Serve with vegetables and drizzle with the rich sauce. Garnish with parsley and enjoy with crusty bread!
