Make the Marinade Combine garlic, rosemary, thyme, cayenne, salt, pepper, and olive oil. Rub mixture all over lamb chops and let marinate for at least 1 hour (or overnight for deeper flavor).
Preheat the Grill Heat grill to medium-high. Oil the grates to prevent sticking.
Grill the Chops Grill lamb chops for 3–4 minutes per side for medium-rare, or longer for desired doneness. Use a meat thermometer: 135°F for medium-rare, 145°F for medium.
Rest & Serve Let chops rest for 5 minutes before serving to retain juices. Garnish with fresh herbs or a squeeze of lemon if desired.
