🔥 Instructions

  1. Make the Mojo Marinade
    • Whisk together orange juice, lime juice, garlic, cumin, oregano, salt, pepper, and olive oil.
  2. Marinate the Pork
    • Score the pork skin and fat.
    • Place pork in a large zip-top bag or dish and pour marinade over it.
    • Refrigerate for 12–24 hours, turning occasionally.
  3. Roast the Pork
    • Preheat oven to 325°F (160°C).
    • Place pork in a roasting pan and cover with foil.
    • Roast for 3–4 hours until tender.
  4. Crisp the Skin
    • Remove foil and increase oven to 425°F (220°C).
    • Roast for 30–45 minutes until the exterior is golden and crispy.
  5. Rest & Serve
    • Let pork rest for 15 minutes.
