👨🍳 Instructions:
1. Caramelize the onions
- In a large Dutch oven, melt butter and oil over medium heat.

- Stir in garlic and tomato paste; cook 2 minutes.
2. Sear the beef
- Season beef cubes with salt and pepper.
- In a separate pan, brown beef on all sides.
- Add to the pot with onions.
3. Deglaze and braise
- Pour in wine and scrape up browned bits.
- Add broth, thyme, bay leaves, and bring to a simmer.
- Cover and braise in oven at 325°F (160°C) for 2½ to 3 hours until beef is fork-tender.
4. Finish and serve
- Toast baguette slices and top with Gruyère.
- Broil until bubbly and golden.
- Serve beef with cheesy crostini or over mashed potatoes.
