Pisto (Spanish Vegetable Stew)

Ingredients

  • 1 eggplant (aubergine), diced
  • 2 zucchinis (courgettes), diced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 3–4 garlic cloves, minced
  • 400g canned or fresh tomatoes, chopped
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • Optional: paprika, cumin, bay leaf, fresh parsley, fried egg or Manchego cheese for topping
