Lazy Day Lemon Cream Pie Bars
Ingredients:
For the Crust:
1 1/2 cups all-purpose flour
1/2 cup powdered sugar
3/4 cup unsalted butter, cold and cubed
For the Filling:
1 (14 oz) can sweetened condensed milk
4 large egg yolks
1/2 cup fresh lemon juice (about 3 to 4 lemons)
1 tablespoon lemon zest
1/2 teaspoon vanilla extract
Optional Topping:
Powdered sugar for dusting
Whipped cream and lemon slices for garnish
How to Make It:
Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
Make the crust by mixing flour and powdered sugar in a bowl. Cut in the cold butter with a pastry cutter or your hands until crumbly. Press into the prepared pan and bake for 15 minutes, or until lightly golden.
Prepare the filling by whisking together sweetened condensed milk, egg yolks, lemon juice, lemon zest, and vanilla extract until smooth.
Pour the filling over the warm crust and bake for 15 to 18 minutes, until the center is just set.
Cool completely, then refrigerate for at least 2 hours for best texture.
Garnish with powdered sugar, whipped cream, and lemon slices. Slice and serve
