Creamy Cajun Chicken Spaghetti with Garlic Mozzarella Sauce
Ingredients:
12 oz spaghetti
1 lb boneless, skinless chicken breasts, sliced into strips
2 tablespoons Cajun seasoning
3 tablespoons olive oil
4 cloves garlic, minced
1 1/2 cups heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup chicken broth
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
Cook spaghetti according to package instructions until al dente. Drain and set aside.
Season chicken with Cajun seasoning, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6-7 minutes, until fully cooked and lightly browned. Remove and set aside.
In the same skillet, add garlic and sauté for 1 minute until fragrant.
Stir in heavy cream and chicken broth. Simmer for 3-4 minutes until slightly thickened.
Add mozzarella and Parmesan cheeses, stirring until melted and smooth.
Return chicken to the skillet and toss to coat in the creamy garlic mozzarella sauce.
Add cooked spaghetti and gently mix until evenly coated.
Garnish with fresh parsley before serving.
