Creamy Coconut Beef and Chickpea Curry Served with Buttery Garlic Naan
Ingredients:
1.5 lbs beef stew meat or chuck, cut into bite-size pieces
1 can (15 oz) chickpeas, drained and rinsed
1 can (13.5 oz) coconut milk
1 onion, finely chopped
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons curry powder
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon cayenne pepper (optional)
1 tablespoon tomato paste
1 cup beef broth or water
Salt and pepper, to taste
2 tablespoons oil
For the Garlic Naan:
2 cups all-purpose flour
1/2 cup plain yogurt
1/4 cup warm milk
