Mediterranean Roasted Beet & Chickpea Wraps
Ingredients:
4 whole wheat or gluten-free wraps
2 medium beets (peeled, chopped)
1 ½ cups cooked chickpeas
2 tbsp olive oil
1 tsp cumin, ½ tsp smoked paprika
Salt & pepper to taste
1 cup spinach or arugula
½ red onion, thinly sliced
¼ cup chopped parsley
Tahini Sauce:
¼ cup tahini
2 tbsp lemon juice
1 clove garlic, minced
2–3 tbsp water
Pinch of salt
Instructions:
1. Toss beets and chickpeas with oil, cumin, paprika, salt & pepper. Roast at 400°F (200°C) for 25–30 mins.
2. Whisk tahini, lemon, garlic, salt, and water until smooth.
3. Warm wraps. Fill with greens, roasted veggies, onion, parsley, and drizzle tahini sauce.
4. Roll and enjoy!
Optional: Add cucumber or roasted red peppers for extra crunch!
