Oven-Baked Herb Chicken Drumsticks with Roasted Vegetables

Ingredients
For the Chicken:
Chicken drumsticks
2 tbsp olive oil
3 garlic cloves, minced
1 tsp paprika
1 tsp dried thyme
1 tsp dried oregano
1 tbsp lemon juice
Salt & black pepper, to taste
For the Vegetables:
2 potatoes, diced
2 carrots, chopped
1 red bell pepper, diced
1 sweet potato, peeled and diced
1½ tbsp olive oil
1 tsp garlic powder
Salt & pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Preheat oven to 400°F (200°C).
2. Season the chicken: In a large bowl, toss drumsticks with olive oil, minced garlic, paprika, thyme, oregano, lemon juice, salt, and pepper.
3. Prepare vegetables: In a baking dish, combine all the diced vegetables. Drizzle with olive oil, sprinkle garlic powder, salt, and pepper. Mix well.
4. Assemble and bake: Arrange the seasoned drumsticks over the vegetables. Bake uncovered for 45–50 minutes, or until the chicken is golden and cooked through and vegetables are fork-tender.
5. Garnish with freshly chopped parsley and serve warm.
