🧂 Ingredients:
- 800g beef chuck or stew meat, cut into large chunks
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, peeled and sliced
- 3 garlic cloves, minced
- 400g canned crushed tomatoes (or 3 fresh tomatoes, grated)
- 2 tbsp tomato paste
- 1 tsp paprika
- 1 tsp dried thyme or oregano
- Salt and pepper to taste
- 2 cups beef broth or water
- Fresh parsley, chopped (for garnish)
- Optional: rosemary sprigs for extra aroma
🔥 Preparation Method:
1. Sear the Beef
- Heat olive oil in a heavy pot or Dutch oven.
- Add beef chunks and brown them on all sides. Remove and set aside.
2. Sauté the Vegetables
- In the same pot, add onions, carrots, and garlic.
- Cook until softened and fragrant, about 5 minutes.
3. Build the Sauce
- Stir in tomato paste, crushed tomatoes, paprika, thyme, salt, and pepper.
- Return the beef to the pot and pour in the broth.
4. Slow Cook
- Cover and simmer on low heat for 1.5 to 2 hours, until beef is tender and sauce is thick.
- Stir occasionally and adjust seasoning if needed.
5. Serve & Garnish
- Spoon into bowls, garnish with fresh parsley and rosemary.
- Serve with crusty bread, mashed potatoes, or rice.
