🥣 Traditional Portuguese Kale Soup

Ingredients

  • •2 tablespoons Extra-Virgin Olive Oil
  • •3 Medium Potatoes
  • •2 Medium Onions
  • •6 cloves Garlic
  • •2 Bay Leaves
  • •1 pound Kale
  • •Coarse Salt And Pepper
  • •1 (15-ounce) can Red Beans
  • •1 can Tomatoes
  • •1 pound Chourico
  • •2 Carrots
  • •4 cups Chicken Broth

    Instructions

    1. Heat the oil in a deep pot over medium high heat and saute the onions and garlic.
    2. Add potatoes and cover and cook for about 5 minutes, stirring occasionally.
    3. Add the bay leaves and kale to the pot, cover the pot and cook for about 2 minutes.
    4. Season with salt and pepper to taste.
    5. Add the beans, carrots, tomatoes, chouriço, and broth to the pot and bring the soup to a full boil.
    6. Reduce the heat back to medium and cook 5 to 10 minutes longer or until potatoes are tender and carrots are cooked.
    7. Serve this soup with crusty bread
