🇬🇷 Greek Octopus Stew With Potatoes

🧂 Ingredients:

  • 1 kg octopus (fresh or frozen, cleaned and cut into chunks)
  • 800g potatoes (peeled and cut into large pieces)
  • 2 medium onions (sliced)
  • 150 ml sweet red wine
  • 2/3 tbsp tomato paste
  • 12 tbsp extra virgin olive oil
  • 1 bay leaf
  • ½ tsp ground pepper
  • Optional: freshly ground pepper for serving

🍳 Instructions:

  1. Prep the octopus: Cut into 5–6 cm pieces. Rinse well.
  2. Cook the octopus: Place in a pot with onions, bay leaf, wine, and 600 ml water. Bring to a boil, then simmer for 1 hour until tender.
  3. Add flavor: Stir in tomato paste, olive oil, and pepper.
  4. Add potatoes: Simmer on medium-low for 30–40 minutes until potatoes are soft and sauce thickens. Stir often to prevent sticking.
  5. Rest & serve: Let sit for 20 minutes before serving. Garnish with freshly ground pepper.
