Lamb Shank with Creamy Mash Potatoes
Ingredients:
4 lamb shanks
Salt and pepper (to taste)
2 tbsp olive oil
1 onion, chopped
4 garlic cloves, minced
2 carrots, diced
2 celery stalks, diced
2 cups beef broth
1 cup red wine (optional, replace with more broth if desired)
1 tbsp tomato paste
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
Mashed Potatoes:
2 lbs potatoes, peeled and cubed
1/2 cup heavy cream
1/4 cup butter
Salt and pepper (to taste)
Preheat oven to 350°F (175°C). Season lamb shanks with salt and pepper.
In a large pot, heat olive oil and sear lamb shanks until browned on all sides. Remove and set aside.
