Ingredients:
3–4 lbs beef chuck roast
Salt and pepper to taste
2 tbsp olive oil
1 large onion, chopped
4 cloves garlic, minced
4–5 carrots, peeled and cut into chunks
4–5 potatoes, peeled and cut into chunks
2 cups beef broth
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
2 tbsp tomato paste (optional for richness)
2 tbsp cornstarch + 2 tbsp water (for thickening gravy)
