Ingredients:

  • Olive oil – 1 tbsp
  • Unsalted butter – 1 tbsp
  • White onion – 100g, finely diced
  • Celery – 100g, finely diced
  • Garlic – 2 cloves, finely chopped
  • Fresh ginger – 7g, finely chopped
  • Plain flour – 30g
  • Cayenne pepper – 1 tsp
  • Smoked paprika – 2 tsp
  • Turmeric powder – 1 tsp
  • Ground cumin – 1 tsp
  • Tomato paste – 2 tbsp
  • White wine – 150ml
  • Fish stock – 1 liter
  • Live mussels – 250g, cleaned
  • Haddock fillets – 2, skinless and sliced
  • King prawns – 8, whole
  • Lemon juice – from 1 lemon
  • Double cream – 30ml
  • Salt – to taste
