Ingredients:

  • Chicken pieces (bone-in, skin-on preferred)
  • Juice and zest of 2 oranges
  • Juice and zest of 1 lemon
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 carrot, cut into matchsticks
  • 2 tbsp olive oil
  • ½ tsp turmeric
  • ½ tsp paprika
  • Salt and pepper, to taste
  • 1 chicken stock cube
  • 1 tbsp soy sauce (optional, for umami)
  • A pinch of saffron threads, steeped in 2 tbsp hot water
  • Slivered pistachios or almonds, for garnish (optional)
