1/2 tsp cumin
Salt & pepper to taste
1 head romaine or butter lettuce (for wraps)
1/2 cup cherry tomatoes (halved)
1/4 cup red onion (diced)
1/4 cup corn (optional)
1/4 cup fresh cilantro (chopped)
1/4 cup Greek yogurt or sour cream
1 tbsp lime juice
Jalapeños (optional, for heat)
Marinate Shrimp: In a bowl, mix shrimp with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Let sit for 10 minutes.
Grill or Sauté Shrimp: Cook shrimp on a hot grill or pan for about 2-3 minutes per side until opaque and slightly charred.
Assemble Wraps: Place shrimp into lettuce leaves. Top with cherry tomatoes, red onion, corn, and cilantro.
Drizzle Sauce: Mix Greek yogurt (or sour cream) with lime juice and drizzle over the wraps.
