Ingredients
- 1 package (16 oz) potato gnocchi (fresh or shelf-stable)
- 3–4 Italian sausage links (sliced or crumbled)
- 1 pint cherry or grape tomatoes
- 1 red onion, sliced
- 3–4 garlic cloves, smashed
- 2 tbsp olive oil
- 1 tsp dried rosemary or Italian herbs
- Salt & pepper to taste
- Optional: baby spinach or kale, mozzarella or Parmesan for topping
🔥 Instructions
- Preheat oven to 425°F (220°C).
- Toss everything—gnocchi, sausage, tomatoes, onion, garlic—with olive oil, herbs, salt, and pepper on a large sheet pan.
- Spread evenly and roast for 20–25 minutes, stirring once halfway through, until gnocchi are golden and tomatoes burst.
- Optional finish: Add fresh greens and cheese during the last 5 minutes of baking.
- Serve hot, maybe with a drizzle of balsamic glaze or a sprinkle of chili flakes for extra zing.
