Ingredients:
1 lb fresh calamari, cleaned and cut into rings
2 tbsp olive oil
2 cloves garlic, minced
1 fresh red chili, finely chopped
Zest and juice of 1 lemon
1 tbsp fresh parsley, chopped
Salt and black pepper, to taste
Directions:
Marinate the calamari: In a bowl, combine olive oil, garlic, chili, lemon zest, lemon juice, salt, and pepper. Add calamari and marinate for 15–20 minutes.
Preheat the grill: Heat grill or grill pan over medium-high heat.
Grill the calamari: Cook calamari for 1–2 minutes per side until lightly charred and just cooked through. Do not overcook.
Garnish & serve: Transfer to a platter, drizzle with extra chili oil if desired, and sprinkle with parsley.
