Ingredients (makes 12 muffins)
- 1 lb breakfast sausage (mild or spicy)
- 4 large eggs
- 1 cup shredded sharp cheddar cheese
- 1 cup Bisquick or other baking mix
- Optional: chopped green onions, diced bell peppers, or a pinch of black pepper

- Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
- Cook sausage in a skillet over medium heat until browned and crumbly. Drain excess fat and let cool slightly.
- Mix ingredients: In a large bowl, lightly beat the eggs. Add cheese, baking mix, and cooked sausage. Stir until well combined.
- Fill muffin cups about ¾ full with the mixture.
- Bake for 18–22 minutes, or until golden brown and a toothpick comes out clean.
- Cool slightly before serving. These freeze well and reheat beautifully in the microwave.
