- 200g squid (cut into rings)
- 1 onion (finely chopped)
- 3 garlic cloves (minced)
- 1 red bell pepper (diced)
- 2 ripe tomatoes (peeled and chopped)
- 750ml fish stock or vegetable broth
- 1 glass dry white wine (Vinho Verde is ideal)
- 4 tbsp olive oil
- 1 bay leaf
- 1 tsp sweet paprika
- 1 tbsp tomato paste
- Salt and pepper to taste
- Fresh parsley or cilantro (for garnish)
