Ingredients:
- 2 eggs (free-range)
- 2 slices of nitrate-free bacon
- 1 beef sausage or plant-based alternative
- 1 handful cherry tomatoes
- 1 cup mushrooms (sliced)
- 1 medium potato (cut into chips)
- Olive oil or avocado oil
- Sea salt & cracked pepper
- Optional: baked beans, spinach, or avocado
Method:
- Prep the chips: Toss potato slices in oil, salt, and pepper. Bake at 200°C (400°F) for 25–30 mins until golden.
- Cook the proteins: Pan-fry bacon and sausage until crispy. Set aside.
- Sauté the veggies: In the same pan, cook mushrooms and tomatoes until soft and caramelized.
- Fry the eggs: Sunny-side up or scrambled—your call.
- Assemble: Plate everything with the chips, add optional sides, and drizzle with a touch of hot sauce or chimichurri for a Luke-style twist.
