- 12 oz spaghetti or fettuccine
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 4 garlic cloves, minced
- ½ cup sun-dried tomatoes (optional but delicious)
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ cup chicken broth (optional for extra depth)
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes
- Salt and pepper to taste
- Fresh parsley or basil for garnish
👩🍳 Instructions
- Cook pasta according to package directions. Reserve ½ cup pasta water, then drain and set aside.
- Sauté shrimp in olive oil over medium heat until pink and cooked through (about 2–3 minutes per side). Remove and set aside.
- In the same skillet, sauté garlic until fragrant. Add sun-dried tomatoes and cook for 1–2 minutes.
- Pour in heavy cream, chicken broth (if using), Parmesan, Italian seasoning, and red pepper flakes. Simmer until creamy and slightly thickened.
- Return shrimp to the skillet, add pasta, and toss everything together. Use reserved pasta water to loosen the sauce if needed.
- Garnish with fresh herbs and serve warm.
