Ingredients:

1 ½ lbs chicken breast, cut into bite-sized pieces
1 can (14 oz) coconut milk
2 tbsp red curry paste
2 tbsp soy sauce
1 tbsp fish sauce
1 tbsp lime juice
1 tbsp brown sugar
2 cloves garlic, minced
1 tbsp fresh ginger, grated
1 tbsp vegetable oil
Fresh cilantro, for garnish
Lime wedges, for serving

Marinate the Chicken:

In a large bowl, whisk together the coconut milk, red curry paste, soy sauce, fish sauce, lime juice, brown sugar, garlic, and ginger.
Add the chicken pieces to the marinade, stirring to coat them well.
