French Chicken Braised in Red Wine

  • 1 whole chicken (cut into 8 pieces) or 6–8 bone-in thighs
  • 4 oz bacon or lardons, diced
  • 1 bottle dry red wine (Burgundy or Pinot Noir)
  • 2 cups chicken stock
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 4 garlic cloves, smashed
  • 1 tbsp tomato paste
  • 1 bay leaf
  • 3 sprigs thyme
  • 1 lb mushrooms, halved
  • 16 pearl onions (or shallots)
