Arroz de Camarão – Portuguese Shrimp Rice Recipe

🧾 Ingredients

For the Shrimp Stock:

  • 300g shrimp heads and shells
  • 1.5 liters water
  • 1 large onion (chopped)
  • 3 garlic cloves
  • 1 large carrot (sliced)
  • 6 black peppercorns
  • Fresh thyme and parsley
  • 2 bay leaves
  • 1 tbsp olive oil
  • 1 tbsp salt

For the Rice:

  • 300g cleaned shrimp (20/30 caliber)
  • 400g Carolino rice (or any short-grain rice)
  • 30ml olive oil
  • ⅓ cup white wine (about 80ml)
  • 1 large onion (diced)
  • 3 garlic cloves (minced)
  • 1 bay leaf
  • 2 ripe tomatoes (peeled and seeded)
  • 2 tbsp tomato concentrate
  • ½ tsp piri piri powder (optional for heat)
  • 1 liter shrimp broth (from above)
  • Salt and black pepper to taste
  • Fresh coriander for garnish
