  1. Make the Shrimp Stock: In a large pot, heat olive oil and sauté shrimp heads and shells until golden. Add water, onion, garlic, carrot, herbs, and spices. Simmer for 30–40 minutes. Strain and reserve the broth.
  2. Prepare the Rice Base: In another pot, heat olive oil. Sauté onion and garlic until soft. Add bay leaf, tomatoes, and tomato concentrate. Cook for 5 minutes.
  3. Add Shrimp and Wine: Stir in the cleaned shrimp and white wine. Let it simmer for 2–3 minutes.
  4. Cook the Rice: Add rice and mix well. Pour in the shrimp broth and season with salt, pepper, and piri piri. Simmer uncovered for 20–25 minutes until rice is tender and slightly soupy.
  5. Finish and Serve: Remove from heat, garnish with fresh coriander, and serve hot. It should be juicy—not dry—like a risotto.
