Arroz de Camarão – Portuguese Shrimp Rice Recipe

- Make the Shrimp Stock: In a large pot, heat olive oil and sauté shrimp heads and shells until golden. Add water, onion, garlic, carrot, herbs, and spices. Simmer for 30–40 minutes. Strain and reserve the broth.
- Prepare the Rice Base: In another pot, heat olive oil. Sauté onion and garlic until soft. Add bay leaf, tomatoes, and tomato concentrate. Cook for 5 minutes.
- Add Shrimp and Wine: Stir in the cleaned shrimp and white wine. Let it simmer for 2–3 minutes.
- Cook the Rice: Add rice and mix well. Pour in the shrimp broth and season with salt, pepper, and piri piri. Simmer uncovered for 20–25 minutes until rice is tender and slightly soupy.
- Finish and Serve: Remove from heat, garnish with fresh coriander, and serve hot. It should be juicy—not dry—like a risotto.
