Ingredients
2 beautiful aubergines
1 garlic clove
– 1 yogurt stirred
2 tbsp olive oil
1/2 lemon
1 tbsp. of coriander

1. Preheat the oven to 210 oC (th. 7).
2. Prepare the eggplants: Cut them in half lengthwise. Incorporate the flesh into crosspieces, then place it in an oiled dish, skinwards. Cook for about 25 minutes.
3. 3. Pick up the flesh: Let the eggplants warm, then recover the flesh with a spoon.
4. Mix the ingredients: In a blender, mix the eggplant meat with the peeled and cut garlic clove in half, lemon juice, olive oil, yogurt, and salt. Mix until a smooth and homogeneous texture is obtained.
5. Cool: Pour the mixture into a bowl and let it cool. Then be checked for at least 1 hour.
6. Serve: When serving, sprinkle with chiseled coriander.
Health tip
Eggplants are very rich in soluble fibers, which lower the GI. Serve this very fresh caviar, with vegetable sticks soaking as an aperitif, or as a condiment with chicken skewers, for example.
