Preheat Oven: Set to 350°F (175°C).
Prep the Meat:
Rinse corned beef under cold water to remove excess brine.
Pat dry and place fat-side up on a large sheet of foil in a roasting pan.
Add Flavor:
Rub mustard all over the top and sides.
Sprinkle spice packet (and brown sugar, if using) over the top.
Wrap & Bake:
Tightly wrap the foil around the brisket.
Bake for 1 hour per pound (e.g., 3 lbs = 3 hours).
Optional Broil:
Open foil and broil for 5 minutes to crisp the top.
Rest & Slice:
Let rest for 10 minutes.
Slice against the grain and serve with sautéed cabbage or potatoes.
