  • 1.2 kg chuck beef
  • Salt & pepper
  • 3 tbsp olive oil
  • 3 garlic cloves
  • 1 onion
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 800g canned tomatoes
  • 3 tbsp tomato paste
  • 2 beef bouillon cubes
  • 1 cup red wine
  • 1.5 cups water
  • ¾ tsp dried thyme
  • 3 bay leaves
  • 1 lb dried pappardelle
  • Parmigiano Reggiano (to serve)
  • Fresh parsley (optional)
