Instructions
Step 1: Bake the Chocolate Cake
Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
In another bowl, beat the sugar, vegetable oil, eggs, and vanilla until well combined. Mix in the milk.
Gradually add the dry ingredients, then slowly pour in the boiling water, mixing until smooth.
Divide the batter between the pans and bake for 25-30 minutes or until a toothpick comes out clean.
Allow the cakes to cool completely before slicing each in half horizontally to create four layers.
Step 2: Make the Cherry Filling
In a small saucepan, combine the reserved cherry juice, sugar, and cornstarch. Bring to a simmer, stirring until thickened.
Stir in the drained cherries and cherry liqueur (if using), then set aside to cool.
Step 3: Whip the Cream Frosting
In a cold bowl, beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.
Step 4: Assemble the Cake
Place the first cake layer on a serving plate and spread a layer of cherry filling over it.
Top with a layer of whipped cream, then repeat with the remaining layers.
Spread whipped cream over the top and sides of the cake, smoothing it out.
Step 5: Garnish
Decorate the cake with chocolate shavings and fresh cherries.
Refrigerate for at least 1 hour before serving for the best flavor.
