Cheddar Scallion English Muffin Bread
👩🍳 Directions:
1. Prepare the Pan Grease a 9×5-inch metal loaf pan. Dust with 2 tbsp cornmeal to coat the bottom and sides.
2. Activate the Yeast In a small bowl, mix yeast, warm water, and a pinch of sugar. Let sit for 5 minutes until foamy.
3. Make the Dough In a large bowl or stand mixer, combine flour, remaining sugar, salt, pepper, and baking soda. Add scallions and cheddar. Pour in buttermilk, oil, and yeast mixture. Mix with a dough hook (or by hand) until soft and slightly sticky (about 4–6 minutes).
4. Proof the Dough Press dough evenly into the prepared pan. Sprinkle top with remaining 1 tbsp cornmeal. Cover with plastic wrap and let rise in a warm place for 1 hour, until doubled.
5. Bake Preheat oven to 400°F (200°C). Bake for 22–25 minutes until golden brown and sounds hollow when tapped. Cool completely before slicing.
